Need recipe please - have lost mine!

Think you might just be a bit too late for this year, will rummage around and see if I can find my recipe for you though.

20-30 heads of elderflower

2 sliced lemons

70g citric acid

1.8kg sugar

1 camden tablet

1.4l of boiling water

Crush camden tablet, add the sugar, lemons and boiling water; stir to dissolve sugar, add the elderflower heads, cover and steep for 5 days, stirring twice a day. Sieve and bottle.

Use to taste - diluted with fizzy or still water.

You were right Janet - a bit late in the day, but after an extensive ramble on the edges of a bit of nearby forest, I managed to get the elderflowers, but deary me - had no idea that Camden Tablets were just to be found in French pharmacies. Looks like this exercise will have to be put off for next year...

I always buy my "stash" of Camden tablets when over in the UK - it is also not always easy (surprisingly) to get citric acid out of the pharmacists either!

You might want to put in an order with your pharmacy in the spring for some "acide citrique"
