My local Carrefour has begun to carry a (limited) range of gluten free bread and cakes

Which Carrefour did you find the wheat free bread, as I know that some stores vary in products etc.

I am pretty sure a lot of the bigger Carrefour stores in Paris also have wheat free products - try the one on Boulevard Saint-Marcel (13th) or the one in the Italie 2 shopping centre (13th).
